Christmas Spiced Mulled Wine, Citrus, Bay & Spices will knock you out..
Out creep up the Christmas posts, its that time of year when the Christmas tree is up, twinkling lights and tinsle, it’s spine chilling freezing outside (where no amount of layers seem to work) and I’ve eaten mince pies in about three days in a row..

What a FAIL! So succumbing to the Wintery Christmas feeling of overeating, I enjoy making mulled wine at home, not just for the season but even as early as October its so much nicer to have warm wine drinks and hot toddies alike.
This weekend, with the family over, large saucepan on the stove, bottles of red, hunting down spices in the cupboard, I decided to use this recipe from the Great British Chefs Christmas Collection for Chef Adam’s Mulled Wine.
The recipe included:
- 750ml of red wine
- 250ml of orange juice
- 100ml of water
- 50ml of peach schnapps
- 1/2 orange, pare the zest
- 5g of star anise
- 3g of cloves
- 1g of juniper berries
- 1 cinammon stick
- 1 cardamon pod
- 1 bay leaf
- 1 thyme
Using some fragrant, pungent herbs like bay leaf, thyme for a mellow hint and citrus spritz from the orange juice. So much so that I added a few segments into the wine, to soak up the flavour and they turned out to look an amazing purple hue! This is a successful,easy to make recipe, especially if made into a big punch powl for a family christmas gathering or just a night in for two!
TIP! Sometimes I find making the water and sugar into a syrup first in the saucepan, then adding the wine and rest of ingredients gives it a sweeter taste! Check out the Recipe here http://www.greatbritishchefs.com/recipes/adams-mulled-wine-recipe
